Little choices sure add up …

I feel like I’ve done really well lately with healthy eating. The only two “indulgences” that I’ve caved in to were pizza on Sunday night for dinner (four cheese … mmm!) and chocolate cake yesterday. But overall, I’ve been doing pretty great. One evening when I was hungry for a snack, I sliced up some radishes to dip in light ranch dressing. So good! And one day for a snack, I had celery sticks with light cream cheese. Also, one night instead of grabbing something sugary to eat before bed, I ate a banana. Last night’s dinner was also healthy ~ chicken roasted in the oven and oven-roasted, organic veggies from our CSA ~ sugar snap peas, garlic scapes, turnips, and carrots. (The stems of the garlic scapes were kind of stringy, though ~ what is the best way to cook those?) I’ve also been enjoying vanilla-banana soy protein shakes ~ sometimes for breakfast, sometimes for lunch. Healthy eating ~ better than the best slimming pills out there! :)

Even little activities make a difference

I’m having such a difficult time with weight loss. Hey, it could be worse ~ I could be dealing with something like drug rehab! LOL! :) But seriously, I *have* lost one pound since Friday, so that’s good. I really think that it’s my anti-anxiety medication that’s causing it. At least it’s not totally my fault. I’ve done *really* well eating-wise lately, and I got some good exericse on Saturday morning when I mowed part of our grass. (That is totally a workout.) And I’ve done a lot today, including running up and down stairs to do the laundry. I do think that everyday household activity (like cleaning) counts! I remember going out and running sometimes when I was a student at IU … what a beautiful campus for walking and getting exercise!

Decorating …

I’ve been in such a home decorating mood lately. I’ve been collecting things to hang on our walls, mostly, and also hanging some curtains. Jeff jokes that I’m “nesting” even though I’m not pregnant! :) I would *love* to just snap my fingers and have it all done ~ and have our house look like something on the page of an interior decorating magazine! But it *is* fun making small improvements here and there, when we can. There’s a shopping plaza in our area called Westgate, and I wonder whether they have any decorating-type stores? Anyway, I just hung two valances in our bedroom and some curtains on the window in our upstairs hallway. Amazing what a difference it makes!

I should check into Orlando vacations sometime. It would be awesome to take the kids to Florida for a vacation. We would, of course, see Disney World! But maybe when they’re a bit older. Meredith is still only two and a half years old. We have relatives in Florida, too, so we would go visit them. How old do you think a child should be in order to fully appreciate and remember a Disney World vacation? Although we won’t be going to Florida anytime soon, I’m *really* looking forward to our Indiana trip this summer!

I’ve been seeing a lot of cross country movers lately. I guess that spring and summer are the perfect seasons in which to change locations. We have some new people in our town, and it’s going to be awesome getting to know them! It has been pretty rainy here lately, though, and I hope that all of these people who are moving don’t get rained on! I hope that we can move back to Indiana at some point. I miss having our families nearby. Even though we probably won’t be moving back to Indiana for a while, it’s fun to daydream about sometimes! :)

Random ramblings

It’s 9:08 p.m., and while I’m not yet ready to go to bed, I don’t exactly what to start any new projects, either. The kids are watching “Bolt” (yes, they’re not in bed yet!). I’m letting them stay up until Daddy gets home (he went to a funeral ~ so sad!). Anyway, I’ve been playing around with my other blog, and I think that I found an *awesome*, *perfect* design! It’s so “me”! Now I’m just trying to figure out how to increase readership and my page rank. Should I blog about something such as life insurance quotes? haha :) I suppose that I shouldn’t be so concerned about page rank, but I would like for it to be something other than a zero! *sigh*

Camping: a hotel without room service

Can you believe that I’ve never been camping? Lots of people look at me funny when I tell them that. However, we want to take the kids camping sometime this summer. When Jeff and I got married, we registered for sleeping bags and a tent. And for Christmas last year, we bought a family tent with lots of room. The kids have cute “Lightning McQueen” and Disney Princesses sleeping bags. Not sure where we’ll camp, but I’m excited to experience it for the first time along with the kids. Jeff loves the idea of rv camping, actually. He has a dream of buying an RV and touring America with it, once he’s retired and the kids are grown. I don’t know what I think about that. Living in an RV? I just think about Lucy and Ricky in “The Long, Long Trailer” (or whatever that movie was called!). Could be fun, though, perhaps.

Great grilling

Last night, I discovered an awesome way to jazz up turkey burgers. I took the recipe for cilantro-mint sauce in one of Martha Stewart’s cookbooks, added it to ground turkey, and made burgers as usual. It would have been great to grill them, but we don’t have our grill up and running yet. Anyway, I topped them with regular American cheese ~ yummy! (Hmm … you could even use bleu cheese and call it the “Blue Advantage,” LOL!)

So, here’s what I did … in a food processor, combine 1 C flat-leaf parsley, 1 C cilantro, 1 or 2 garlic cloves, 1 tsp. cumin, salt and pepper to taste, and 1/2 C mint leaves. Process until everything is well blended and chopped. Then, put the mixture into a bowl. Add about 2 TB. olive oil, mix it together, and add the ground turkey. I recommend grilling the burgers. Very easy … and they were so good! The mint is a bit refreshing ~ adds a little bit of a different taste. Relatively healthy for you, too!

You should be in pictures

Our four-year-old son seems to have taken a keen interest in photography. And brave me ~ I’m letting him use our Nikon DSLR, as long as he hangs the strap around his neck and is supervised. This morning, he and Meredith lined up a group of their favorite stuffed animals and had a “photo shoot.” :) Then, Lucas told Meredith how to sit, how to look at the camera, etc., and took pictures of her. It was *too* funny. He even tries to get her to look at the camera and smile the same way I do! :) So far, Lucas has only taken pictures of stuffed animals, me cleaning out my car, and things around the house. No steel buildings or anything, but … it seriously makes me wonder whether he may have an interest in photography in the future ~ maybe even as a professional photographer? You never know!

First CSA share of the season

Losing weight seems *so* much easier in the summertime. We just picked up our first CSA share yesterday evening, and it included *lots* of mixed greens. I envision enjoying a *lot* of fresh, healthy salads this summer ~ a great diet plan like Anoretix! :) And ever since someone mentioned a honey-mustard vinaigrette the other day, that has sounded delicious. My husband doesn’t like mustard, but I may just whip some up for myself. I’d like to eat salads for lunches. Hopefully the inundation of fresh mixed greens will help with my weight-loss plan. I can’t wait to cook and bake with all of these fresh, organic goodies!
